Kitchen ceiling

Ok, first daft question :- should I use "kitchen and bathroom" paint on my kitchen ceiling, or is standard silk/soft sheen just as good?

Also, if applying with a roller, should I thin out the paint first, or just apply as is straight from the tin. The ceiling is already painted white, which I'll also be putting on, not sure if it's "kitchen" paint or not.
