Kitchen - mount undermount ceramic sink over worktop?

I like the look of a simple square undermount sink for our utility room, but the budget calls for a cheaper worktop, white laminate, not a solid stone, composite or anything.
Would there be any issue over-mounting an undermount sink? All I can see may be an issue, is the neatness of the finish on the parts you're not supposed to be able to see!

A lot of the composite sinks are either inset or undermount
The RAK single bowl ceramic ones are either as well.

Yeah, a lot of under mount sinks are mounted on top, you just need to seal the worktop cut areas very well and possibly re-fished the lip a little, depends on how it looks.
