kitchen sink cabinet size

hope this is the right forum, but I've got a query regarding kitchen sinks and the size of cabinets they need beneath them. I'm currently designing a layout and noticed most inset sinks say they require a 600mm cabinet. I was wondering if this meant they HAD to have a 600mm only, or could I put a 800 or 1000 unit in and have the basin take the 600mm it needs that way. In my preferred design I would rather it sat on a 1000mm 2 door cabinet. Also, does it matter if the drainer part spills over onto another cabinet? Just in case the sink we chose is 1.2m long.

You need minmum 600 beneath the bowl so any size over will do. You can use two smaller but you will have to cut out the side panels to accomodate. Draining boards can go over anything even washing machines.

while on the subject -any opinions on the what to look for in a new kitchen sink? Is brand, thickness (if steel) or material an important issue? What do people think of those composite/granite-looking types?

I'm after an inset, single sink with drainer and as large a basin as possible. If going for steel, which finish is the best to go for - stainless, brushed or something called silk?

The more durable and scratch resistant the better? Ours is always getting bashed with pots and has loads of spills to contend with.

Sorry to go on, but even something as straightforward as a sink has it's difficulties.
