Kitchen tap - plastic pipe to hose tails?

Hello, my kitchen mixer tap needs replacing.

The feed comes in via plastic push-fit into copper pipe to the tap (see pic).

I have a new mixer tap with flexible hoses and union fittings (see second pic).

What are the best ways to connect these?

Depends on your skill level and what tools you have access to.
Easiest will be buy a pair of pushfit tails of the correct length (Screwfix or Toolstation the usual source, use their website to select the appropriate type).
Better would be to buy a pair of 15mm compression isolating valves (get the £6 lever valves not the cheap screwdriver types).
Ditch those redundant pushfit couplers
Fit the valves to the ends of the copper pipes
Use a file to flat the sharp edge on the top of each valve
Fit your tails to the valves (hand tight plus 1/4 turn is plenty).
Either method you'll need to isolate cold supply to the house, put your (combi) boiler on standby.
