Kitchen Worktop Durable Varnish / Protection

Hi Again!!!
I have installed a shelf in my bathroom to hold the sink... it is 40mm solid beech worktop. I wanted to stain/ varnish it with Ronseal Diamond Hard Varnish... Will 2 coats of this be enough protection for bathroom mist and splashes of water? or should I look for sealing alternative?

Varnish is not always ideal as it can trap the moisture behind it. A water repellant breathable wood stain would be better, although oiling would be the best option.
