Hi,
If you can`t lift the toilet or slide the laminate underneath, being careful not to damage any pipework or tiles, then my method is to create a cardboard template around the toilet and then tranfer this to the assembled laminate. You can then cut it, disassemle and fit.
You need to leave a small expansion gap which can be filled with colour matched sealant.
