Levelling an old, uneven brick floor.What to use ?

The small entrance hall ( 7ftx7ft) approx' in our old cottage has a solid brick floor bedded on sand/soil, no dpc. It is dry and we don't have a problem with damp but the bricks are very worn and the floor uneven. At the moment it has a carpet laid over them.
What is the best solution to get a level surface with out putting a thick screed down and making a step/lip out of the hallway into adjoining rooms ? I want to level the floor but by filling in the dips rather than building up a thick layer, if this makes sense. What type of product will be the best to use?

lift up the bricks (easy enough) and lay a new floor.

best would be to dig it out (just sand and earth, should be easy) and lay a concrete slab with dpm and insulation, will be warmer and dry. You can put tile, slate, wood, whatever you want as finish.
 
Brian - "old cottage"? Is it a Listed Building? If it is, you'll need to talk to the local Council before touching the floor.
