Lights for kitchen

I was looking at installing CAT 2 Louvre lights in my kitchen such as these http://www.screwfix.com/app/sfd/cat/pro.jsp?cId=101198&ts=54982&id=84697

First question: Is this type of light fitting suitable for a kitchen. I ask because of steam, grease, etc. that is likely to be present in the air.

Secondly: Is there a way to determine how many fittings / tubes I would need for the room. Currently I have a 3 x 60W spotlight fitting in the centre of the room. Its not too bad but the lighting is too directional and leads to darker areas of the room. I replaced with 3 x 20W CFL bulbs, but the room then appeared gloomy. How many fluorescent Watts do I need to replace 180 Incandescent Watts?

The light you link to is also quite directional. The best type of fluorescent light is the bare tube type, since it disperses its light over the full 360 degrees, reflecting it off the ceiling etc. That light is also going to be a nightmare to clean and service, because of all the louvres and nooks and crannies. I wouldn't bother!

IMO, your best way forward may be to keep the lights you have, and have additional under-cabinet fluorescent lights.
