lowering a ceiling

We've just aquired a house that needs a LOT of work, so I will be using this forum a lot soon :)

I have done a search on this but can't find much info.

The house used to be a shop, with a tall single storey to the front joined onto a small double storey at the back. The single storey is quite a large area about 10m x 10m. It has very high ceilings and have been adviced that it would benefit from lowering the ceilings. We can see the sense in that, as all the partitions are stud walls and it would open the potential of a good sized extra bedroom upstairs if we did this.

The million dollar question is....just how difficult is it to lower a ceiling/floor?
