I am going to spray some MDF. In the past it has taken many many coats to get a good finish, especially on the edges. Is this due to varying porisity/density ove the surface of the board? Question, what can I spray on first to seal the board and make painting easier?

Probably some woodfiller first, then sand it down till nice and flat , then spray. That way the wood filler will seal the edges before spraying. 
ordinary emulsion seals very well and can be sanded, then any paint applied will not be absorbed but sit on top.

moisture resistant mdf takes paint alot better than normal mdf, try it next time...
best thing to do is brush pva glue on all the edges then when its dry it will sand smooth then it will take primer/paint like the rest of the board
you will have to add a little water to the pva to make it brushable. depending on the mdf quallity you may have to apply 2 coats
