Sadly the plumber who installed my tap didn't do a great job - the mixer tap isn't straight but not by much, maybe a couple of millimetres  It's not a problem to get the the screws fastening the tap to the wall. If I unscrew it could I use force to straighten the tap?

Well, it's not just the screws, you also have the pipework attached holding it in place
Granted. But the pipework isn't completely rigidly fixed to the wall, isn't it? Do you think I would adjust the tap slightly? and if so how?

If I was installing it the pipework would be copper and it would be fixed.

You could try undoing the holding screws and moving it , but no force as you may kink or damage the pipe or a joint.

The real awnser is to open up the wall and re align if you have no movement

Get the plumber back, the nincompoop
