Hi,
Had a problem with central heating 3 months ago and a plumber changed the 3 port valve, (it looks like only the head unit was changed-wife was there at the time),
central heating works fine now but i cant adjust the hot water temp.
The dial on the water cylinder clicks when turned but hot water remains scolding hot no matter where I put dial to ? Im sure temp was adjustable before.
Any help much appreciated.

There ought to be a thermostat strapped to the side of your hot water cylinder.

When the cylinder is up to temp, this thermostat ought to operate the three-way valve to prevent any more heat being supplied to the cylinder.
Maybe your 3-way valve is not working right. See if you can hear it move when the cyl stat clicks (you can adjust the cyl stat with a screwdriver).

It is perhaps possible that the plumber did not fix the problem right.

your wife does the scolding ....your water is scalding....your plumber wants plugging , butt
