Oak Staircase & Doors - HELP

I have dark stained wood staircase and doors and wish them to be lighter. I do not want to sand down and paint white so I am considering changing my current staircase (Bannister, spindles etc.) to white oak. Also the doors to white oak veneer.

I have done quite a bit of research on both but found out yesterday that as I intend to get the hall and landing skimmed too that the plaster may affect the oak... I have been told there is a risk of cracking / splitting and colour change.

Is this something anyone else knows anything about or has experienced?
Will it be the same risks with doors as they are veneer or just the staircase as its solid?
Would treating the wood and covering it when skim is done and drying do anything to help?

There's no point in covering the oak or the veneered doors as they both will absorb the moisture from wet plaster. Best bet, get your plastering done, let it dry completely then you can do doors and staircase without a worry. Additionally if wet plaster gets onto oak it will stain it permanently black.
