Old IKEA desk - re-staining surface

Complete newbie when it comes to woodworking/restoration. I've got an old 'beech effect' desk that I've lightly sanded the surface of (in parts) to remove years of scratches and stains - see picture. Planning to sand the rest of the surface to get an even finish. Looking for suggestions as to what to treat it with afterwards, to restore it (as close as possible) to it's original look ? Confused by all of the options available.
