Opinions and advice on roof.

Hey,
I recently moved into a property and the previous owner had started an outbuilding but never finished it. I excited to take some of the work myself.
I want to start by finishing off the roof and sort soffits, facias

Would I need to do old roof or warm roof?

Any advice on plan of attack would be greatly appreciated.

It is a tiled pitched roof already designed to be a cold roof, so you don’t get a choice.

I’m not convinced the eaves detail is correct, the overhang looks very small for fascia and gutter and there doesn’t seem to be a tilt fillet to support the bottom tile

He hasn’t done any seat cuts for the soffit

So I would need to leave space between insulation and roof for ventilation.
I regards to the tilt fillet (Good spot) think I could add one in to support the bottom tiles or would they need to come off to rectify?

Its a sub-terranean outhouse. Why on earth are you worrying about ventilation and insulation?
 
The bigger concern is it doesn't look to have the pitch for those tiles!
