Plaster Board

I am planning to bring down an old, cracked ceiling and re board it with plasterboard, getting it skimmed thereafter.

Which side should I leave shoing into the room if i plan to have it plastered? Is it the brown side, rather than the white?

What if you want to paint straight on the plasterboard. I would have thought you use the white side for this as well. Am I wrong?
