Plaster flush with the strair strings

Looking to re skim the hall stairs and landing. However if done the plaster will become flush with the strair strings and look even worse than it does now as the rebate varies down the stairs
Options I can think of are replacing whole stair case as they creak a lot.
Replacing the stringers if possible.
Knocking bottom portion of plaster out along the stairs and redoing blending in to an equal rebate.

Any advice please or other options. Thanks

add a lip to the string say 12-15mm thick overhang the string edge by 20-25mm

in other words you take a bit off wood the length off the sting around 44mm wide with 21mm on the string and 23mm overhang
 
Thanks but forgive my ignorance. Wouldn't this easily get damaged. Ie kids running up stairs, accidentally getting knocked with Hoover etc.

personally i think it will be fine but if your worried make the overhang from 1" planed [18-22mm]
or
overhang the thickness off planed timber [between 18 and 22mm]
then fill in flush with planed timber cut to shape
