Would it be ok to plasterboard my walls first as my electrician needs into the ceiling first? as he needs to run cables etc.

Do what you like - it's your house.

It's "always" better to do the ceilings first. Things done in order make any job run easier.

Roughcaster.

Wait till the spark has finished wiring & then board the ceilings first. Won’t he also need access to the walls to run & terminate the cables to light switch/socket outlet boxes?

do the ceilings first.

if you happen to have a ceiling joist tight against the wall, this may get swallowed up by the wall plaster thickness, thus leaving you with little material to nail the ceiling boards into.
