Plasterboard fixed to bare brick walls or plaster straight onto the brick walls and skim?

I've got several rooms down to bare brick of a 100 year old house. What is the best and correct method of plastering this?

I'd prefer to screw taper edge boards to the ceiling (can't dot and dab that) then either dot and dab taper edge boards onto the walls or use fixing foam. If better sound attenuation is required I'd mount the boards onto resilient bars instead of dot and dab. Taper edge board gives you the option of taping and jointing instead of skimming which is often faster
