Plasterboard over doorframes

Hi all,
We are currently week 7 into our garage conversion and the doors and windows have just been installed and plasterboard and plaster now completed by our builders.
Whilst we were painting the room, we noticed the plasterboard and plaster actually goes over the door/window frames which I’ve not seen before. Is this OK as I’m concerned if we ever change the doors and windows if the wall will come out with them? Also curious as to where the skirting board will come up to, as there appears to be minimal room unless it goes on the glass itself?! I’m concerned if this will incur future remedial works and cause condensation or damp perhaps. Also the builder chose not to install a lintel above the doors - will this be an issue with supporting them?
Would really like advice on this as tried to talk to the builder and if questioned on anything he argues and gets rather unprofessional. It’s been a costly project so want it done properly. Any advice welcome :) Photos attached for reference

Plastering looks a bit ropey, and yeah you might get a little overlap with the skirts.

Shame the builder didn’t get some frame spacers to avoid that happening. Not much can be done now.

It’s normal to put the plasterboard like that. It doesn’t need a lintel assuming no brickwork going above the doors.

Assume you’re getting some plastic cladding over the ply board?
