I've ripped off all the old lath'n'plaster from the walls and ceiling, and now have bare ceiling joists/wall studs, and one brick wall.

That's the whole messy bit done and dusted.

Question is, which do I start first? The walls, or the ceiling? I can't see a reason why the ordering would matter particularly, but you never know.

If you have cornice/coving you will have a bit of tolerance.
But when ceilings are fixed prior to walls the walls are seldom square and gaps will be unavoidale, so when you apply your walls be it board or plaster it will help the joints and cover any gaps, the other way round becomes a s o d of a job.

Normally ceilings always first. ;) Why are you fitting cornice? (coving?). It’s only marginally more fashionable than Artex these days & I spend a lot of time taking the stuff down & going to a nice square edge.

Square edge is fine by me - didn't think it was possible to have no gap. I will take you advice and do the ceiling first.

Note sure what the diff. is between cornicing and coving - google image search seems to return pretty much the same thing...

Coving and a Cornice ?
Cornice is the generic term, coving has uniform profile, cornice includes corner mouldings with patterned faces.
But much the same thing
