Pointing a single leaf garage wall - precautions?

I have reviewed tips on pointing, however no mention of single leaf walls.

One thing I have concerns about is it being a single leaf wall and not sure if I could cause a collapse. the wall being 8 feet tall and 20 feet long. the outside has been pointed at some point.
Inside the garage, the mortar below the damp course is crumbling in places.

I was going to use a grinder (to minimise vibrating the wall)with chisel carefully for the "perks" , 1/2 inch as described on other internet material with 3:1 mortar mix.

will i be ok to remove all the mortar as above or should I do small sections to minimise collapse?

Perps;) And yes do a section @ a time - more for convenience and if you get a spell of bad weather/ driving rain that'll come through the wall with the joints open. You might do better with a masonry drill - no hammer on the perps. A Plugging chisel is the old skool tool for joints.
