We have some rustic oak furniture which has a waxed but dull finish in keeping with its design. however, areas such as the table and sideboard tops are taking on a shine from normal "dusting" but this is out of character with the other areas of woodwork. Is there any way to pevent this shine building up while still providing protection for the wood?

think you might have a problem here! when you say "dusting" is that just wiping a duster over it or using some kind of wax or cleaner? Just about all wax polishes will produce a shine over time. Not sure how just using a dry cloth can cause a shine though? Some waxes actually make a surface duller depending on the existing finish - Antiquwax is one that I have found to be particularly useless in that respect :)
