You hold the fitting, push the thin collar towards the fitting and the pipe should slide out. (I say SHOULD. Sometimes it likes to play with you. )
The new pipe 'should' slide in and grip but give it a really good tug to make sure.
If they are twist - lock ones, you obviously have to unlock them first before doing the above.
