Recommend a king prawn dish for a novice to cook?

I’m off work today and my missus just asked if tea would be on the table when she gets home from work.

Instead of my speciality beans on toast, I thought i’d do her something with king prawns because she likes them.

Where do I start?

What sort of dish do you want to do.

Prawns go well with pasta -tagliatelli, chillis, lime etc

Or a risotto maybe

Tip - prawns fresh or pre cooked dont need long to cook before they go rubbery.

A pasta dish would be good. Prawns, pasta and some sauce. Maybe another meat too?
 
Chorizo goes well with prawn. -classic flavours in paella make with chicken stock, onion, paprika, saffron!

Or maybe a variation on prawn linguine with chorizo it in.

Its usually chilli and garlic with cream

Prawns go very well with a curry. Not an expert but this was what I would feed my dates on. I found I would soak the prawns in cold water and adding the both when the rest of the curry is ready for serving keeping the Prawns large and soft. Add the prawns too soon and they would swivel to little prawns and toughen up.

So prawn and chorizo with rice? All in a pan at the same time or microwave some rice then put them together?

Paella and risotto dishes are cooked with the rice.

Prawns go in near the end, not sure if they need pan frying with the garlic.....

I think this is the recipe my wife uses:
Its quite easy.
You can use raw or cooked prawns -they dont need long, just a few mins to heat, a bit longer if raw, but they get overcooked very quickly.

You can use a stock cube for the stock.
Bung some peppers in the oven first if you want them roasted.
Add some chilli flakes if you want it hot

Prawn spaghetti.

What I do is first finely chop half an onion and a couple of cloves of garlic. sweat them off in a pan with a little oil for a couple of minutes until the onions are soft. Then add 1 tin of chopped tomatoes and let that simmer. At this point you can add some chilli flakes and/or fresh chopped/dried basil if you want. Add a little sugar to take the sharpness out of the tomatoes. A good squirt of tomato ketchup will add a bit more taste and sweetness to the sauce. Bring a pan of water to the boil. Add a little salt then the dried pasta (I prefer linguine), bring to the boil and then simmer for slightly less it says on the packet. Five minutes from the end cooking time of the pasta, put your raw (grey) prawns into the sauce mix and cook them until they turn pink. If using cooked prawns just put them in a minute or two so before the end, just to warm through. I normally strain the water from the pasta, put it back in the pan and then add the sauce/prawn mix to that, stir and leave for another minute or so and the pasta will absorb some of the sauce. Put on a plate and garnish with a few torn basil leaves (if you bought fresh). Personally I would get some fresh Basil. Job done.
 
If you have a gas hob, I have a foolproof way of cooking rice using the absorption method, if you want to cook rice separately.

I always use basmati, keeps its shape better than bog-standard long grain.

First take your rice (I find a mug is plenty for 3) and soak for 20 mins in cold water. Rinse with cold water then drain. Add 2 mugs (or twice the measure of the dry rice if not using a mugful). Bring to the boil, a quick stir to break up any lumps, then lid on and turn the gas right down to the minimum setting. Then let it cook for 10-15 mins.

The beauty of this method is there is no draining the rice afterwards and you can keep it on the heat a little longer if you need to.

But you will probably earn more Brownie points using one pan (eg the paella) then there's less washing up.

That's another easy way to cook. The trick with paella is to add the liquid bit by bit as the rice soaks it up. Arborio rice is an acceptable substitute if you can't find the real thing.

To my mind, Bomba rice is best.
 
Prawns & Chorizo... yuk! I like prawns and I like Chorizo, but not together.
 
Get some prawns, chorizo and cocktail sticks.

Slice the chorizo, wrap the prawn around it and stick the cocktail stick through both. Pan fry the prawns wrapped round the chorizo and serve with some aaoli dip.
