Can anyone advise where I can view the regulations regarding worktop space either side of a hob. My understanding is that hobs should not be placed next to a doorway or wall, with 300ml either side. Is this a general guideline or a specific legal regulation? Many thanks.

You have not said if its gas or electric.
For Gas there are clearances that need to be followed (not building regs but Gas Safety Regs) or you wont get it fitted and signed off. The clearances are in the manufacturers instructions.
Without manufacturers instructions (they may require more clearances) you will need:
50mm front, back & sides on clear worktop.
150mm from a wall or cupboard to either side.
