Repair to Brick Wall

Hi,
Wondering if anyone can answer a couple of questions about repairing a brick wall.

If you have a load bearing wall and you wanted to remove a couple of courses of brick, one at the base of the wall and one in the middle in order to install a DPC roll and replace damaged / loose mortar, can this be done say two bricks at a time, allow 24 hours and work your way along ?
For the DPC, the bricks will have to be removed and for the loose mortar the whole depth of mortar will need to be cut out and replaced.
I was concerned that
1) You wouldn't be able to pack the mortar tight enough into the joint and the weight of the wall may settle down on the fresh mortar and cause issue elsewhere on the wall.
2) Will small batches of mortar applied 24 hours apart adhere to one another like a whole course of fresh mortar would

Any help appreciated

Yes it's possible to remove bricks this way and we have done it. It does depend on the type and quality of the construction though.
