Replacing dimmer with normal switch

Hi - I have a dimmer switch which controls two sets of downlights in my living room (one set in the middle and the other set of tilted downlights on the other side of the room).

Should I just make a note of the wiring and replicate it?

Yes, ensure the power is off though :LOL:
Take pictures of the connections and mark the cables.
The problem you may have is thats a double box and standard 2 gang switches only use a 1 gang box.
You may have to buy a 3 gang grid light switch and blank one of the holes off.
 
Great thank you. It worked!

I noticed that on light-switch, the earth went to the metal back box and then to the faceplate itself. I am putting in metal switches and sockets and have just started the sockets and noticed that there's only an earth to the faceplate (not to the back box). Should I be adding an earth to the back box also?

Its good practice to earth the backbox but if one of the screw lugs is fixed ( normally atleast one is loose to allow for levelling the socket) then its not critical.
