Replacing spalling bricks

Hi new to here can a builder or bricky tell me how many bricks to remove on this corner at a time without it collapsing it's bad as you can see

You could take 5 out with no problem. Possibly more but no need really. Once you start you can roll along one in-one out.

Yes, looks ok. You should avoid very hard cement based mortar for pointing or laying bricks. The bricks are obviously vulnerable to spalling and hard cement will accelerate that. Use a softer lime based mortar instead.
