I disconnected the twin fans behind the front grill to stop them from running all the time - even when starting cold. With them disconnected, the engine runs erratically until warm.

I assume the fans running all the time is due to a faulty sensor?

Anyone any idea where I would find the sensor?

The sensor could be screwed into the side of the radiator about halfway down......if its not, the fans are likely to be controlled by the ECU.
This wouldn't cause erratic cold running on a diesel engine, but faulty glowplugs or an air leak into the fuel supply somewhere would.....
