I’m prepping an old wall for repainting and there are a couple of very small spots where some plaster has been revealed while sanding (max 5cm across).

As these are so small, do I need to mist coat them, or could I just dab some water on them immediately before painting?

Whatever paint you have read what the online application data sheet says regarding bare plaster.

Real world
I'd probably just dampen down as you say then roll wall and leave over night for emulsion to fully dry before further coats. Small areas like that will be fine.
