Space taken up by Plasterboard vs Wet Plaster

Hi,

I've had to gut the kitchen of the house I've moved into; it was in a state. A builder from whom I'd arranged a quote said the best thing to do is strip the plaster (which in places was pretty manky) back to the brick and dot and dab the room.

It's a galley kitchen, so pretty narrow, and I believe dot and dabbed plasterboard will take up more of the room than traditional wet plaster... Am I right in thinking this? I know the difference will come down to a few cms, but I really want to keep the room as wide as possible for opening units, etc.

You are probably talking about a few mms.
Rending the walls and plaster finish at the lowest point, would add about 10-15mm to wall.
D'n'B boards and skim about 15-20mm.
 
Are any of the walls external? If so you can get the advantage of incorporating insulation.
 
Or leave the walls as bare brick, clean up the snot, repoint where required then paint or varnish
