I bought some spruce boards, 180mm wide, 16mm deep. One was badly cupped but I've managed to flatten it by soaking it and placing a heavy weight on it. It looks fine now but how do I dry it to avoid it cupping or splitting?

Its likely cupped because of the grain, so drying it will re introduce the bend. You might be able to plane the cup out of it, or - if its being used for floor boards, fix it with the bow up. But both depend on the nature of the cupping and the use the boards are being put to. If its only one, you can probably afford to discard it or cut it down for other uses.

iff you have loads off clamps 2x1baton cross grain clamp each side every 400-600mm along its length
if you have a few clamps then clamp the 2 batons and a wood screw just off the edge to hold and remove clamp
dry over several weeks in room off use
then you want to use fix it within a day off removing clamps

but expect a say 60% failure

the more usual option, rip to 2 or 3 widths and glue alternating up and down

Thanks. I'll try clamping. It's not worth the effort of ripping and glueing.
