I’ve got an arched doorway which appears to have been made by the previous owner to join 2 bedrooms. I want to block off the arch. Should I cut the arch out to the joist above then create the stud wall or would I be alright in just doing the head plate where the arch begins then some vertical studs?

As long as you can get a good fixings with timbers carry on.
No need to remove arch.
Put board up against arch and draw line to get shape.
I'd blob board adhesive around arch which will fix board around edges to prevent cracks with movement.
You could also use 15mm board for a stronger wall.
