Tap glands - type of grease to use?

To save a few quid I'm replacing the O-Rings and washers in some tap glands, like this:

What kind of grease should I use to lubricate the internal threads, etc? I think I have lying around some white grease and some copper grease. Or would some silicone grease be preferable?

Silicon grease as it's classed as potable, any type of mineral grease isn't and can get in and taint the water supply. It's also kinder to the modern seals/o-rings
