Tiling kitchen splashback - uneven wall

As per title I'm intending to tile a backsplash onto my kitchen wall and when measuring up I've noticed the wall bows a bit (vertically & horizontally) meaning some undulation. At its worst the gap is about 3-4mm.

I'm assuming I won't get away with just tiling onto this surface? If so grateful for any advice on how to deal with it. Sand the peaks or skim/fill the troughs? If the latter what should I use?

Substrate is plaster painted with primer and tiles are 150mm x 75mm

Bear in mind I'm very much a novice DIYer.
