Absolutely possible. Who needs a dining room? Our house is the same. I have built a removable wall across the top end of our dining room which blocks it off from the rest of the house leaving a corridor from the "stupid" sized hall to the kitchen. I don't need four bedrooms unless all my grandkids come to stay at once but a fourth bedroom would add a good few thousand to the value of my house. I've told my daughters to convert our dining room to a permanent fourth bedroom when we peg it and they inherit because they will be selling it. It does look like you have a bit more work in removing a door and reinstating the kitchen entrance and perhaps bringing the removed dining room wall further out but nothing too major I wouldn't think.
Loft conversion, can add value and won't make the house as "top heavy" compared to losing ground floor space - and you should try to squeeze a WC into the GF if you can. Common these days to go for 2 beds (as you often lose the box room for the stairs) and a bathroom.
