Two layers of finish?

I am not an apprentice trained plasterer, but have been successfully operating for four years. But I still don't understand the talk on the forums about two coats of finish plaster. Is this done one after the other, once the first has started to harden? Why two coats? Do all plasteres do it this way?

Common practice mate ,how have you survived 4 years working not knowing this.
 
flipping heck. I'm an amateur with a big crow bar for a trowel and i knew that.

two coat plastering is common practice because:

a. it gives the best results.

b. it is the easiest and quickest way to achieve the best results.

First coat fills the big hollows - second coat fills the tiny hollows and gives a perfectly flat finish. One thick coat leaves you dragging the stuff all over the shop.
