We have just had our loft conversion done to a certain point and whilst we wait for the plasterer, the cold weather is making our loft space and home, cold. There are gaps of various sizes around the windows from an inch one side to 5mm the other.

It also looks like there are groves in the framework of the window for plasterboard to slot into - white arrow in picture (complete guess as novice).

My questions are what can I do to stop the draught coming through - (can i pack it with rock wool) and what will need to be done for the plasterer to be able to do his work around the window as the gap from the rafter to the groove is considerable?

The slot your arrow is pointing to is for the plasterboard to slot into.
You can buy expanding tapes of different thicknesses for gaps like those.

The gaps between velux frame and rafters cane be filled with expanding foam/rock wool or compriband type tape.

If space permits then you can do a insulated reveal With something like 25mm celotex, before the plasterboard.
This will help stop and cold bridging and drafts.
