What's that word that means a smell or a sound or a song or some other stimulation evokes a memory of something? I have wanted to know for ages!

No, it's a name of a phenomenom type thing, a happening.
 
That's an interesting one...are you sure there's such a word? Is it English or something like a French phrase such as deja vu?

Say you smell some bread cooking, and you think "Mmm, that reminds me of going to my Great Nan's house". There is a word that is the name of how something reminds you of something else, how something evokes a memory. It's an English word.

I once went to a grammar course for scientists and the speaker said it then.

You're thinking of the Apricot smell of Madelaines, aren't you?
 
I can only think of remembrance; evocation; search for the past; calling to mind; recall.

However, in French there is the concept of the "involuntary memory" though I don't know a good English equivalent.
