What would you do with this bathroom wall

as i see it my options are to overboard it with cement board or moisture resistant plasterboard

or knock off the plaster and board the wall?

the wall will have a bath all the way along it and be tiled floor to ceiling

Either way, whats the best method of fixing plasterboard and cement board to a wall, batons or adhesive?

The manufactures of cement boards normally require them to be fixed to battens.
I have in the past when restriction have meant that battens could not be fixed, fixed them using dry-wall adhesive and secondary mechanical fixings for security.
 
I'd be inclined to remove all that plaster first, then dot and dab your cement board onto the brick
