What is the technique called when you carve out the sides of a door lining and the top section so that all three pieces then slot in together like a perfectly fitting jig saw? Someone said to me its a called a biscuit cut, others said its haunching and someone else said something else.

Is there a formal name given to this cut out?

Sounds like the housed joint you often see in a door lining:

The joint is called a housing joint. For a rebated casing the joint is essentially the same.
