Why my onoions do this?

if your refering to the crowns on top, they are trying to bolt ie reproduce in basic terms! just cut them off
 
are you talking about the seed heads and the fact that they seem to be growing upwards too much?

Looks like they have bolted.

If you planted them about March it might have been unseasonable weather that made them decide to do it. Maybe needed watering or got too hot/too cold. Mine generally don't do that (mild and wet).

if i snap the heads off will the onions carry on growing?
