We have a company in carrying out a loft room extension for us... This is how they have the wooden beams attached to the steel joist. Hubby and I can't get our heads round how the steel is load bearing the beams? Surely the beams should be rested on the steel? Any advice would be greatly appreciated please .

Not a very clear picture but don't the beams tie into a wooden ridge beam that rests on top of the steel beam, if so the wooden ridge beam takes the load and transfers it on to the steel beam

looks like the flat roof joists rest on the beam and terminate with a capping joist plate, onto which the pitched rafter plumb cut is fixed. All good.

Perhaps those small bits of timber (which will just be for fixing the ceiling to) are confusing you.
