I would love to go and spend time in a lovely French farmhouse for a few weeks.

France is a lovely place, in fact there are many beautiful countries in the EU

are you expecting say a 20hr working week over 3 or 4 days??
are you prepared to let them work when they want or expect shifts when you need them ??
i would say any more than 25hours a week is slave labour ??

If a UK citizen was taking up paid employment, then a work visa is required. As a volunteer, the work visa in this scenario is not required.
It can be grey area when working in EU remotely. The state would have to monitor your laptop use and collect proof that you were working without an appropriate visa.
Working viz a viz accommodation etc would be by negotiation.
Their working would need to be under supervision, depending on their demonstrated capability.
 
You will need to apply for a tewerkstellingsvergunning TWV if they are working for you, for less than 90 days.

Accommodation, food etc, is payment. If they already have a residence permit they can work as self employed. Be mindful of the minimum wage and insurance requirements employers have. Try not to think you are clever and can circumvent Dutch Labour and Immigration laws. The penalties are severe.

The same would apply to a lot of EU countries. The requirement also applies to EU citizens volunteering for work in UK.
In the case of a person who is helping as a friend, and just giving a helping hand, I suspect the requirement would be unjustified.
Hospitality offered to a friend would be normal behaviour, and does not require a permit.

Theres a solution for shooting yourself in the foot too.

But it's better not to do it in the 1st place

I do not need a solution to a problem that does not exist.
However when someone, makes a claim to have benefitted from Brexit, it would be perfectly normal for them to be able to explain, and be subject to scrutiny.
In the absence of, and the refusal to provide any explanation, their claim must be considered as not worthy of scrutiny.
 
The problem doesn’t exist? Is that because the Dutch farmhouse that you own is made up?
