bad plaster / plasterboard on underside of stairs and walls

I took down my under stairs cupboard to allow for the wood flooring I've ordered. I also stripped the super fresco wallpaper in part of the hall and under stairs too.

The plaster isn't looking so good, but i think I could possibly use some polyfilla plaster repair on it. I want to paint the walls really when they're repaired.

but the underside of the staircase is plasterboard-ed, and the lower part is in really bad condition. It's very loose and wobbly.

Can I just rip the board out and replace it with some more? Do I then use something like the polyfilla plaster repair to repair the seam/line between the new board and the existing walls etc. ?
