Blown plaster galore. Repair, replace or board?

Purchased this place back in March and I'm now getting around to decorating it. 60's semi.

I've Plyed the bedroom floor ready for wood flooring and started to strip the super heavy lining paper which I inherited with the place and as I suspected the walls aren't looking good. While the plaster and top coat are ok in parts, a good part of 3 out of 4 walls (the fourth being clean board) are just shot to bits with cracks and sound hollow. A good shove on them reveals how loose the base coat is.

I suspect that it's just too far gone to repair, I think if I go pulling it off then I'm not going to be left with much on there.

Debating whether it is worth stripping it right back to the brick then dot & dab board on there,
or,
perhaps batten out the walls and fix it on, perhaps insulating the external and party wall with some PIR board. Plasterer in to skim whichever way.

Or I get a plasterer in to fully rebuild the base coat and then skim it.

Wondering what you would suggest in terms on economy and finish? I like to do things myself, but chucking wet plaster on the walls and skimming is not something I'll attempt.

Given what you describe then the best practice would be to go/DIY back to brick.
Internal wall insulation is the modern standard for older houses.
Internal wall insulation in conjunction with deep loft insulation, & modern glazing is best.
Get an on-site pro plasterer's opinion about re-finishing the walls.
