we have had a new consumer unit fitted and it had to be moved 1m away due to size restrictions. The electrician has used an adaptable plastic box to place all the cables in to and then used crimps on each cable to extend it to the new consumer unit... is this correct?

There are many ways of doing it, people's opinions will vary on whether crimps are 'correct' but it is a common method. I would be more concerned with how he's brought his cables in and out of the adaptable box. Has he used glands or just drilled holes?
He has used black stuffing glands

Seriously though, so long as he's crimped the cables properly, sleeves all his earths and generally done a neat job, don't worry about it

Are the stuffing glands made for T & E?
Probably not but I was thinking purely in terms of maintaining some form of IP rating as opposed to actual strain relief.
I would hope the cables are clipped (they could well be plastered in above the box) between box and consumer unit (or perhaps a nice bit of 50x50)

Depending on the design of the gland, they may not provide sufficient sealing.
