what i would like to do is replace 2 single sockets i have in the kitchen for two double sockets, would it be a case of just replacing them or would i have to do a complete rewire to allow this?
It should be OK provided the singles are NOT spurs off spurs and are a main part of the kitchen ring circuit.
You have to prize out the existing single box and expand the hole to accommodate a double back box. Biggest hassle is going to be existing tiles that might need to be cut.
The only way I know of cutting in situ tiling to change the size from single to double back box is with a dremel and a tile cutting wheel on it.
Be careful not to damage any existing wire when re-sizing the hole.
Strictly speaking you are changing the kitchen socket size and the work should be notified, but then who is to say that it wasn't done for maintenance purposes.
