Confused by bath taps

Hi all, I was considering changing my bath to a shower or bath over shower. I had a look at the plumbing and I’m not sure about a couple of things:

1. Why are the two lines coming in to each tap?

2. Won’t I need copper pipes for a shower, how would I make the switch?

There aren't - the supply going to each tap, is simply T'ed off, to supply another outlet.

Ah, so they’re going to the basin taps then I assume.

If you have a washbasin, the other side of that wall, then they probably go to that. Alternatively, if the horizontal pipes passing through that wall, are the supply pipes, then the pipes passing vertically down, will feed something else.
